Every week the menu follows the same rhythm: we read the market, build the menu, cook in small batches, and serve it in the dining room. The process is short by design, so nothing sits too long and nothing goes to waste.

Morning Market Run

We start before the stalls fill up. The chef walks the aisles, checks what arrived overnight, and picks the lots that look best today. If the zucchini are small and firm, they go on the menu. If the tomatoes are soft, they become sauce.

Menu Draft

By mid-morning the day's card is written on the chalkboard. It is short, usually five or six dishes, and it changes as soon as something runs out. The kitchen prints no menus in advance, so the card always matches what is actually in the pantry.

Prep and Cook

Vegetables are washed, trimmed, and cut in the morning. Stocks simmer on the back burner. Each plate is cooked to order, not held under heat lamps. The team works in small batches so the texture stays honest and the seasoning stays balanced.

Service and Reset
